Divergan® F & RS (PVPP) > for the polyphenol related stabilisation of beer, wine, juice

Divergan® is cross-linked polyvinyl pyrrolidone (PVPP). It is insoluble in water, alcohol and all common organic solvents. The specific adsorption behaviour makes PVPP unique by removing the polyphenols responsible for colloidal haze development and therewith improves the colloidal stability of e.g. beer without altering its character. Different grades provide the brewers with the opportunity to use the product in regeneration systems or as “single-use” material.
Divergan® (E1202) meets the requirements of the current FCC (Crosspovidon) monograph and complies with the current EU regulations laying down specifications for food additives. Furthermore it is going along with the German purity law of 1516, due to the complete removal during filtration. A special labelling is not required. Specific regulations in the respective countries have to be observed.
For wine the maximum amount of PVPP that can be used in wine fining is restricted by law to 80 g/hL within the EU.

Properties

Divergan® is available in powder form. Divergan® F is the PVPP single use product of BTC made for the application in beer and wine. It is used for colloidal stabilization. In order to maintain its effectiveness, Divergan® F should be kept in a dry place in its closed packaging. Stored in its sealed original packaging its activity is stable for at least 3 years. Divergan® F is a white, hygroscopic powder with a faint characteristic odor.
Divergan® RS is the regenerable PVPP product of BASF, exclusively created for the application in beer. It is used for colloidal stabilization. In order to maintain its effectiveness, Divergan® RS should be kept in a dry place in its closed packaging at ambient temperatures. Stored in its sealed original packaging its activity is stable for at least 3 years. Divergan® RS is a white, hygroscopic powder with a faint characteristic odor.

Applications

In beer Divergan® F removes polyphenols selectively and therewith improves the colloidal stability without altering the character of the beer.
Divergan® F can be directly added to the beer filter together with the filter aid (e.g. Kieselguhr); to take advantage of its full effectiveness Divergan® F should swell 1-2 hours before its use. The optimum contact time with the fluid (to be stabilized) in the filter is then 3-8 min. Divergan® F can also perfectly be applied in the storage vessel before filtration.
In wine Divergan® F removes phenolic compounds selectively and therewith improves the wine’s colour-, bouquet- and colloidal stability. By removing flavonoid polyphenols Divergan® F reduces the amount of precursors of tannins and bitter substances. It therewith improves the taste stability of wine. Divergan® F is best added as a 10% suspension of PVPP in the product medium. The suspension must be allowed to swell for 1-2 hours before its use. By dosing Divergan® F as powder directly to the wine the contact time has to be increased to at least 30 min.
Furthermore, Divergan® F is used as stabilisation aid in fruit juices and to reduce the sugar level in teas by reducing its bitter taste.

In beer Divergan® RS removes polyphenols selectively and therewith improves the colloidal stability without altering the character of the beer.
Divergan® RS is intended for reuse. Therefore special filtration and regeneration equipment is necessary. The PVPP-Filter and a separate dosing vessel are located downstream after the (Kieselguhr) pre-filtration. Divergan® RS is dosed as a ~10% suspension to the beer stream. To provide an ideal conditioning of the fresh material it is recommended to conduct one regeneration process before its first use.
The dry substance can be measured by gravimetric methods to calculate the dosing amount and/or to replace the losses. After the pre-clarified beer is stabilised by Divergan® RS, the suspension has to be regenerated. By using a 1-2% caustic solution in the regeneration process the adsorbed polyphenols will be re-solved and washed out with water afterwards – the solution is ready for the next filtration run then.
