Divergan® HM keeps your wine at its best

Wine connoisseurs know that every high-quality wine is its own little work of art. Many different steps – from choosing the grapes to selecting the label – have an impact on the finished result: the wine that is ultimately presented to the customer. But even the smallest errors in the wine, such as sulphide taints, can have a huge impact on the taste experience. One common cause of such errors is metals like copper, aluminium, manganese and iron. Divergan® HM removes these substances. “The product has been approved by the EU in September. This allows wine producers to remove unwanted metals without any residues and without compromising on flavour. In fact, when the wine is taken care of like this, its taste remains stable even after a long storage time,” says Dr Moritz Pöschl, Head of Sales Human Nutrition Europe at BTC.

Many roads to contamination
BASF's innovative product is also a replacement for “blue fining” – a process that can lead to precipitation of problematic metals such as copper and iron. Metals like this can get into the wine in a variety of ways. Many substances are absorbed from the soil, while metals can also dissolve from the containers in which the wine matures. In addition, copper, for example, is deliberately added to some wines in order to eliminate sulphide taint. Although copper and other metals are bound by the yeast that is added for fermentation, this bonding reaction prevents the optimum fermentation process from taking place. Divergan® HM stops this. As well as metals, adding Divergan® HM can also remove polyphenols. These molecules cause wine to become cloudy.

Desirable minerals remain
“Divergan® HM effectively prevents a metallic, bitter taste in wines, and also stops ageing and suppresses oxidative processes,” describes Pöschl. The polymer forms bonds with copper, iron, aluminium, nickel, zinc, lead, chromium, manganese, cadmium and arsenic. It then precipitates and can be easily filtered out. The alkaline metals that are useful to wine production are not reduced. “By adding Divergan® HM, the polyphenol content can be reduced by up to ten per cent at the same time,” says Pöschl. Incidentally, this kind of treatment is not reserved for premium wines. After all, large transport distances, often linked to fluctuating temperatures, can accelerate ageing and taste-changing processes significantly.
