An emulsifier is a polar molecule with the structure of a “water loving” and an “oil loving” part. Due to this structure, monoglycerides (E 471) can form mono-molecular films between the water and the oil phase. This reduces the interfacial tension within the system. Emulsifiers are needed to mix at least 2 unmixable phases (e.g. water in oil (W/O) or oil and water (O/W) systems) and stabilize that system. BASF’s monoglycerides are used in e.g. the baking industry to prepare baking mixes or as bread improver by improving the dough properties by increasing the crumb structure and freshness.
Properties of monoglycerides
BASF’s monoglycerides (E 471) complies with the current specifications established by the Joint FAO/WHO Expert Committee on Food Additives (JECFA) and the current EU Regulation laying down specifications for food additives.
Our monoglycerides are available as fine powder, powder, paste, greasy paste, viscous oil or liquid oil. They are based on natural ingredients as e.g. palm oil, rape seed oil, sunflower oil or maize germ oil, non-hydrogenated or fully hydrogenated.
All of BASF’s palm oil based monoglycerides are certified by the organization “Roundtable on Sustainable Palm Oil” (RSPO). The monoglycerides are available in the RSPO quality “mass balanced” (MB quality) or even “segregated” (SG quality).
Stored in its unopened original package at a dry and cool place of temperatures of 0-20°C, monoglycerides are stable for at least 12-24 months (type dependent).
Applications of monoglycerides
The global core range-monoglycerides are designed for cake mixes and bread applications to improve dough softness, crumb structure and to avoid staling effects.
Furthermore, BASF’s monoglycerides (E 471) are applicable for:
- Asian noodle applications
- Coffee whitener
- Ice cream
- Meat and sausages
- Peanut butter
- Soup powder
- Starch or potato processing
They also can be used as anti-foaming agent.
