The brand Spongolit® comprises a range of cake emulsifier preparations in powder-form. The highly effective and activated emulsifier systems can be differentiated according to their final application. As aerating emulsifiers they are used to improve the cake volume, crumb structure, crumb moistness and texture.

Properties of our aerating cake emulsifiers
BASF’s aerating agents complies with the current specifications established by the Joint FAO/WHO Expert Committee on Food Additives (JECFA) and the current EU Regulation laying down specifications for food additives. Some are also in compliance with the current FCC (Food Chemical Codex) specification requirements.
Our Spongolit articles are available as fine powder, only. They are based on non-hydrogenated or fully hydrogenated natural oils as e.g. palm oil, rape seed oil, sunflower oil or maize germ oil on a carrier like glucose syrup, skimmed milk powder or soybean flour.
BASF is a founding member of the organization “Roundtable on Sustainable Palm Oil” (RSPO). All palm oil based esterified monoglycerides are certified and available in the RSPO quality “mass balanced” (MB quality) or even “segregated” (SG quality).
Stability: The products should be segregated from foodstuffs and kept in a cool and dry place. The storage temperatures are about 5-20 or even 30°C (detailed information please find in the technical information). The products are stable in their unopened, original package for at least 12-24 months (type dependent).
Applications of our aerating cake emulsifiers
The articles of our Spongolit® range improve the cake volume, crumb structure, crumb moistness, texture, consumer appeal and your revenue. The performance of Spongolit® is highly consistent, tolerant and predictable over time, including mixes. For applications in the baking industry like sponge cake or swiss rolls Spongolit® 283, Spongolit® 450 or Spongolit® 460 is preferred. For muffins or cupcakes Spongolit® 542 is the best choice. The effectiveness of Spongolit® aerating agents depends primarily on the type and ratio of emulsifiers used, but also to a considerable extent on the processing technology during their production.
